How to find buckets?
When starting a new game there should almost always be a bucket and a tarp on your starting island. I was fortunate enough to find 3 within 10 minutes. Just keep an eye open for these as they are now absolutely vital for long term survival.
If you cannot find even a single bucket I would suggest you start a new game and create a new world.

To use the water collector you need 2 buckets and the building prerequisites (being a fire spit and the actual collector).
Fill up 1 bucket with seawater and hang it over the fire spit (bottom part).
Take an empty bucket and attach it to the top part of the collector.
By now lighting the fire, water evaporates and fresh water collects in the top bucket.
The water still is autonomous. You do however need a bucket to scoop out the water. (or a coconut half will do aswell i guess)
The smoker works in a similar way to the water collector. With one crucial difference: placing food does not work with interacting. Do not press the left mouse button while holding a fresh crab/whatever and facing the smoker or you will eat it.
Instead, drop the crab/fish/meat and use the right mouse button to place it inside the smoker.
Light the fire and wait for the bell, after that it shouldn’t spoil anymore.
