I'm not entirely sure, but it's pretty obvious this could get you banned in online, so I strongly recommend playing offline.
Since DS2 doesn’t have an in-game option to disable the online connection, follow this guide.

First off, the most well-known and essential mod to install.
This mod revamps the game's lighting, adding depth and detail. Dynamic shadows are enabled, torches now serve a purpose, and distant scenery has been improved.
Includes detailed lighting customization for every area, improved anti-aliasing settings, and a UI size scaling option. It also includes texture replacement feature, which will be needed for the next mods in the list.
Follow the installation instructions on the mod page, and don't forget to turn off anti-aliasing in the game's video settings.

1.1. 4K Texture Replacement
Replaces nearly all of the game's textures with carefully AI-upscaled versions, enhancing them by 2x or 4x for a sharper, more detailed appearance, while still preserving the original vision of the game.
You'll need DS2LE to install this. Simply place the files from the archive into the "tex_override" folder in your game installation directory. If the folder doesn't exist, just launch and close the game, and it will be created.
