How to get gold rating on Fallow Deers?

Mechanics Explained
ANIMAL DIFFICULTY
To understand the ratings first you need to know how they work.
Most important details missed by new players is that female deers (doe) have no antlers, therefore, there's NO TROPHY RATING on female deers. You must shoot a male deer (buck). On the left we have an animal profile, when you observe an animal, the number on the bottom side indicates the difficulty. Fallow deer have difficulty range of 1 to 5, you want to shoot at ones that are 4 or higher. (3 can work on occassions depending on the trophy but 4 is almost guaranteed unless it bleeds for too long) TROPHY CHECKS
The trophy / harvest checks are seen at the bottom left of the harvest screen.
(1) It must be shot with the right ammunition (mission dictates you must use .243, so this is not an issue)
(2) It must be shot only twice or less
(3) Trophy organ (skull, antler) must be unharmed
(4) Vital organ (Heart, lung, spine) hit
If you miss any of the conditions, the trophy rating is dropped by 1. Meaning a trophy that was supposed to earn a gold, if shot 3 times, would only give a silver, meaning missing any of the conditions will make getting gold astronomically difficult if you miss any.

TROPHY RATING
The trophy rating calculates the difficulty, animal weight and trophy size. Those can be hard to tell from a distance, it's best to rely on animal difficulty rating, which can be observed with a binocular. How fast the animal is downed is also calculated, if the deer drops dead after a few steps you will usually get a 99-100% rating. Some bleed tolerance is possible with gold trophy.

WHERE TO AIM
Try to wait for the fallow deer to face perpendicular to you so you can hit the lung easily. Spine and heart are harder to do due to their sizes.

WHAT AMMO TO USE
While you can only .243 (the starter rifle rounds), there are two types, one gives higher penetration while the other has low penetration but high expansion (organ damage on impact), if you are looking at the side profile of a fallow deer, just use the free expansion round, fallow deer in a sense are not very strong, no matter which round you use a lung shot with high expansion round or a high penetration round punching both lungs gives the same results.

Ammo usage is a highly debated topic, use what works for you!

TIPS
- One of the easier spots is Schonfeldt Windmills, which the previous mission asks you to travel to. To the south there's also a large field area, remember open fields is a lot easier than dense forests where you can make a lot of sound by accident.
- Hutning stands can reduce your visibility to zero, if you have a fallow deer caller, use it in the stand or near it if you have an electronic caller
- Set up tents (they cost 18k but well worth it) about 300-400m out so you can spawn in without scaring the animals while not walking half a day to find deers. Recommend setting them out of alert range of feeding grounds / sleep zones so you can spawn in at the right time to check.
- DO NOT CREATE DEAD ZONES - there's a good chance that dead zone pressure will remove need zones and make your job harder. Hunting pressure goes away after a while, if you find god spots, do not over hunt the animals. Unloading a barrage of shots into the herd like it's CoD can be tempting but don't do it.
- Have fun - Don't lose your marbles trying to find the deers. If you dont get bucks with desired difficulty, just shoot and harvest them so new ones will spawn.
