Track progress in-game
You can not only check your achievement progress in Steam, but also in game. For that click on your username -> Achievements -> Gaijin.Net -> Track progress.
Then they are added to your favorites. There you can click on the calendar icon to get a green bar and text while hovering representing the progresssince the last time you clicked on the icon.

The listed nations do not have full tech trees. Instead, they are found inside the bigger nations represented by their nations flag like Dutch and Belgian vehicles are inside the French tree. An easier way to find the relevant vehicles is the operator section [wiki.warthunder.com] in the War Thunder wiki.
Personally, I found the fastest way to do these achievements are Air Aracade Battles. First, because you get credited for a kill if you deal severe damage, but also if you finish the kill from someone else who did severe damage to your target. Second, you are much earlier in battle and with multiple respawn you get more kills per round. This is also helpful for the "Hero of the Sky" award and the respective "Air-to-Air" achievement.

Most of these you can get easily by just playing. However, the Hornet (Helicopter) achievement is harder to get, because you likely to play it very rarely. Nevertheless, you can get it much faster if you respawn in it when your team is about to win. My experience is that it only counts if it was your last spawned vehicle regardless if you are alive or not made a kill with it.
