Plundering Ships

Plundering ships is by far the fastest way to rake in those Reales. Simply sail around, finding ships that have plenty of sugar, rum, or just plain cash on board. Convoys also offer an opportunity to plunder massive amounts of money in one fell swoop. Key resources will stop being needed. For instance, cloth can be sold once all the needed upgrades that use it have been purchased.

If wanted level, Kenway's Fleet, and repairing the Jackdaw are not among your higher priorities, in the long run, it seems faster to simply sink ships and loot the wreckage than to actually take the time to board and plunder a ship. You only net half the cargo from the ship (after all, you're stuck pulling it from a sinking ship) but especially when fighting droves of Man o' Wars, you don't have to spend all that time climbing sails to destroy flags or accidently blowing up your own crew trying to shoot those blasted powder reserves. You can, instead, spend that time sinking other ships and becoming the terror of the sea!

Assassin Contracts

Assassin Contracts will earn you at least 1,000 Reales each. Some even have the opportunity to get you an additional 500 Reales if you remain undetected. Doing all of these will also earn you the most awesome Pistol Swords, which are exactly what they sound like.

Legendary Ships

These ships are incredibly strong and do massive amounts of damage. If you want to take one out, you will need to have a heavily-fortified Jackdaw. If you do manage to take one out, you will be rewarded with a healthy amount of Reales though.

Hunting the White Whale and other animals

After making your whale outfit or if you never care to make it, keep hunting the whale everytime you see it. One whale skin will net you 4000 Reales when you sell them at the store. Other skins net pretty good returns as well. Red howler monkey skin is 500R for example.
