Some notes:

NPC Horse Races
You can get a permanent +1 horse speed buff to all horses by beating the same NPC in a horse race twice. Don't skip them when they show up.

Missouri Fox Trotters vs Arabians
On testing with +2 Speed Saddle and the +1 Speed from Horse Races, the Missouri Fox Trotter and (Black or Rose Gray) Arabians get the same tested speeds. Which means speed caps out. if speed is equal between them, then the Arabians are objectively the better horse due to better acceleration, handling, and health. You should ride whatever makes you happy though.

Recommendations
Arabian if you value acceleration and maneuverability. Turkoman if you value the more nebulous bravery mechanic. They both have the same top speed.

You can pick up a White Arabian in Chapter 2 after completing Exit Persued by a Bruised Ego. The Black Arabian and Gold Turkoman are available in the Saint Denis Stable in Chapter 4. The other Turkomans won't be available until the Epilogue.

Always use Hooded Stirrups for a hidden +2 Speed and Acceleration. You can't use Hooded Stirrups on Trapper Saddles, but they have +2 Speed/Acceleration built in.
