Survive a gang ambush.

You'll probably achieve this by just riding around the map.
"While there are a handful of other places an ambush can occur, the two most common spots are right along the Kamassa River in central Lemoyne. The first is east of Ringneck Creek, almost directly east of the final "k" in the Ringneck Creek text. Clear 6 gang hideouts. 4 of the 6 hideouts will be done as the story progresses:

I would recommend to just do all of them in the Epilogue.

You can do this two ways:

• Have lots of cash and buy premium cigarettes. The Fence in Van Horde has premium cigarettes on a shelf (do not buy from the catalogue, it takes longer) and then when you max out you can discard them from the satchel. Rinse and repeat.

Find all 20 Dreamcatchers.

Discover 50 animals by studying them.

There are 178 in total. Just study any animal you come across.

Discover 10 equipment items.

This will come naturally as you play the story. This ranges from the lasso, binoculars, camera, upgraded gun belt, tonics satchel, trinkets and so on.

Discover 10 fish species.

You will most likely complete this trying for the legendary fish. If not, fish more and in different spots.

Discover all gangs.

There are 6 main gangs. This should come as you progress throughout the story and as you clear the gang hideouts.

Discover 10 horse breeds.

Study any horse you come across and it should be done.

Discover 48 Weapons.

Collect 48 different weapons throughout the game. You'll get a lot of these as you go along and buy new ones, but here[www.powerpyx.com] is a guide for all locations.

Discover 20 plant species. There are 43 in total. Here is a map of all the plant locations (credit u/hoffmanng25):

Reach maximum Health, Stamina, and Dead Eye.

Achieve level 4 Bonding with your Horse.

This will happen as you play, just pet, brush and feed your horse whenever you can for faster progress.

Pretty self explanatory. Go to a hotel or saloon and pay for a bath.

See a show.

Again, quite self explanatory. Go to the theatre in either Saint Denis or Blackwater.

See a live theatre show.

Go see a show in Saint Denis.

Craft 1 recipe from six different category types.

Quite basic, you need to craft 1 tonic, 1 ammunition, 1 horse care item, 1 cooking recipe, 1 hunting item and 1 weapon. You can purchase more recipes from a Fence.

Complete a home robbery, a shop robbery, a coach robbery, and a train robbery.
