Focus on parts that have high Swing Damage. The game calculates value based on damage:

Two-Handed Swords: The most consistent money makers.

Javelins: Specifically focus on the Harpoon Head. High damage javelins sell for a fortune.

Check the Tavern in any city for "Smithing Orders." Some nobles will pay over 100,000 denars for a single customized weapon.
